Dreaming about flying is traditionally read as freedom, perspective, or escape. It is one of the few dreams anyone has actually counted: 48.3% of people report it, making it the 4th most common of the 19 themes with published prevalence.

When it turns up
Flying dreams cluster around freedom that has just been won or just been threatened: leaving a job, ending a relationship, getting past something that had you stuck. They are also the most common first act in lucid dreams, so if you have been reading about lucidity, expect more of them.

Figures come from the Typical Dreams Questionnaire, the standard instrument in dream research since 1958. Dream dictionaries almost never cite a number for how common a dream actually is — the research exists, it just does not get quoted.
The version matters
The version carries most of the information.
The version people describe as the best dream they have had. It reports as competence rather than escape, and it clusters after problems get solved rather than before.
Flight that requires constant effort, usually just above head height. It tracks freedom that exists but costs you something to maintain.
Loss of control inside the freedom itself. Frequently reported in periods of rapid change that were chosen rather than imposed.
The chase dream wearing different clothes. What matters here is the pursuer, not the flight.
The standard entry into lucid dreaming. If this happens often, techniques exist to make it deliberate, which is a separate subject from interpretation.
Adds an audience to the freedom. It tends to follow situations where your independence has been noticed and commented on.
Commonly claimed, and wrong
Flying dreams are not evidence of the soul leaving the body, and the astral-projection framing adds nothing you can check. They are also not a sign of superiority over other people, which is a Freudian-era reading that has not aged well.

Flying is the most common first act once lucidity begins, reported in a majority of lucid dream logs. It appears to be what people try when they discover the rules are suspended.
It is the most reported variation and generally tracks freedom that is real but limited — usually by an obligation you have not been willing to drop.
